ZUCCHINI PIZZA
Ingredients:
1/2 cup chopped parsley
1 cup chopped onion
4 cups zucchini, thinly sliced
1/2 stick margarine
2 cups shredded mozzarella cheese
2 well-beaten eggs
1 package crescent rolls
Directions:
Saute first 3 ingredients in margarine until transparent.
Add cheese and eggs. Pour into a 9" pie pan that has been lined
with a crust made of crescent rolls. You may sprinkle some oregano
over
the filling.
Bake at 350-375° until brown and bubbly, about 20 to 30 minutes.
Garnish with tomato slices.
