PUMPKIN PICKLES
Ingredients:
6 cups prepared pumpkin
2 cups vinegar
2 cups sugar
2 sticks whole cinnamon
Directions:
Peel and cube flesh of pumpkin (discard seeds and inner pulp). Steam
pumpkin until tender, being sure water does not touch
it. Drain.
Combine sugar, vinegar & cinnamon and simmer for 15 minutes. Add
pumpkin and simmer 3 more minutes. Remove cinnamon and pack boiling
hot in pot pint jars., leaving 1/2" of headroom. Adjust lids. Process
in a boiling water bath for 10 minutes. Makes three pints of sweet
pickles.
